Matcha Cinnamon Rolls

 

I made these vegan, gluten free, and yeast free matcha cinnamon rolls for mother’s day and they were soooo yummy so I had to share them with you all. So without further ado, here’s the recipe!

Dough:

2 cups gluten-free pastry flour

3 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

5 tablespoons chilled butter

3/4 cup almond milk

Filling:

2/3 cup organic brown sugar

3 tablespoons coconut sugar

2 teaspoons cinnamon

4 tablespoons melted butter

1/2 teaspoon vanila extract

Matcha Glaze:

1 cup organic powdered sugar

1 teaspoon matcha powder

3 tablespoons almond milk

Instructions:

1.Preheat the oven to 375F

2. Combine flour, sugar, baking powder in a large bowl then cut in the chilled butter using a fork or your hands

3. Add almond milk and mix until combined

4. Flour a clean surface or a cutting board and dump the dough out, use a rolling pin to roll out the dough into a rectangle (sprinkle on more flour as needed)

5. Make the filling by simply combining all ingredients together in a bowl, then use a spatula to spread the filling over your rectangle of dough

6. Tightly roll your dough into a log (I found this works much better with two people working to roll the dough together)

7. Cut the roll into your desired size for your cinnamon rolls

8. Place an extra 2 tablespoons of butter into your baking dish and place it in your oven for a few seconds until melted, then transfer your cinnamon rolls into your now buttered dish

9. Bake for 25 minutes

10. While the rolls are cooking, make the icing by first combining the matcha and the powdered sugar, then adding in the almond milk one tablespoon at a time
